Scrambled Eggs for 40!

  1. Directions:

  2. Preheat oven to 375 degrees F
  3. Sauté veggies on stove (onions separate from others)
  4. Pam 9” round aluminum disposable baking pans
  5. Assemble ingredients in pans
  6. Add egg and milk mixture
  7. Add cheese
  8. Place baking pans in preheated oven, and bake for 25-35 minutes, or until nicely browned and puffed.
  9. Add more shredded cheese to top of veggie and plain (cover and place in oven for 3 min.)
  10. Cool (2-3 minutes)
  11. Slide onto a serving plate, and cut into wedges to serve.

Ingredients (with lox, 8 slices):

  • 1/4 cup olive oil (or sub some margarine – this is to sauté the veggies)
  • 1/2 medium onion, chopped
  • salt and pepper to taste
  • 1/2 pound smoked salmon
  • 10 eggs
  • 1/2 cup milk
  • 1 (8 ounce) package cream cheese, cubed

Ingredients (veggie, 8 slices)

  • ¼ cup olive oil (or sub some margarine – this is to sauté the veggies)
  • ¼ + medium onion, chopped
  • salt and pepper to taste
  • 10 eggs
  • 4 oz. sliced mushrooms
  • ¼ + large chopped red pepper
  • 10 + medium black olives, chopped in quarters
  • ½ 10 oz. package frozen broccoli
  • ½ cup milk
  • 12 oz. package shredded cheddar (put 8 oz inside with the eggs and sprinkle 4 oz on top after the frittata has finished baking.)
